My mom is a superhero when it comes to solving “problems” in my life. She throws on her cape, picks up her magic wand, and starts searching for the best possible solution. So, when I started to revise my diet and eliminate dairy and soy, she was determined to find ready-to-eat foods and recipe modifications to make it as smooth of a transition as possible.
Last week when I was visiting my parents, my mom must have channeled her inner superhero powers again because she made the BEST dairy and soy free ice cream imaginable….I’m talking de-freakin-licious! My mouth is watering just thinking about it. 🙂
She discovered the recipe when she was reading The Lancaster Sunday Newspaper and decided to give it a try. The main ingredients are coconut milk, cocoa, and agave sugar…a match made in ice cream heaven!
She served the ice cream with a variety of fruit toppings (strawberries, fresh peaches, cherries). Yum!!!
