Summer is here and I couldn’t be happier. Fresh air means fresh herbs and that means fresh tasting everything!
Last summer we were pleasantly surprised to find spearemint growing in abundance outside of our fence! This makes me more excited than I can explain. Mint is satisfying and nostalgic to me. I remember being babysat on a neighboring farm and picking the mint for meadow tea – a favorite summertime thirst quencher. When I shared that story with Mike he surprised me by brewing his first batch and now we do it weekly!
With the mint full blown I’ve been inspired to create so many concoctions! So far we have feasted on Fruit salad adorned with mint along side dinner, meadow tea for a hot day relief, and mint Julips and mojitos on the weekends!

add one cup of torn mint leaves to hot water, add honey for desired sweetness, shake and let sit for one day!
