Purge Dinner

How many times do you get home from work and the last thing you want to do is make an intensive meal!  For me cooking is not so much a pleasure but a chore.  To be completely honest my hubby does most of the  cooking and boy does he cook.  I am not so adventourous but I volunteered to make two meals last week one of which was a Shepard’s Pie (props to Marvelous Girl on this recipe) which how can anyone really resist, it’s such a cozy comfort food.  I wanted to make something using the things I had on hand that I wanted to purge out of our fridge/freezer.  I had all of the ingredients except the ground beef so that was the only thing I had to pick up!  This is also excellent to make since it makes at least 8 servings which are great for lunches throughout the week (we are leftover eaters in this household).

Ingredients:

1.5 lbs ground round beef
1 onion chopped
1 cup peas *we prefer fresh diced green beans (1/4 inch) instead
1 cup diced carrots
1 can corn
1 1/2 – 2 lbs potatoes (I used red skin potatoes because that’s what I had and I used about 6)
8 tablespoons butter (1 stick)
1/2 cup beef broth
1 teaspoon Worcestershire sauce
Salt and pepper to taste

*On a side note this entire meal cost be about $8 dollars for the beef because I had everything else on hand!

Directions:

  1. Peel and quarter potatoes, boil in salted water until tender (about 20 minutes)
  2. While the potatoes are cooking, melt 4 Tablespoons butter (1/2 a stick) in large frying pan
  3. Sauté onions in butter until tender over medium heat (10 mins). If you are adding vegetables, add them according to cooking time. Put any carrots and/or green beans in with the onions. Add corn either at the end of the cooking of the onions, or after the meat has initially cooked.
  4. Add ground beef and sauté until no longer pink. Add salt, pepper and Worcestershire sauce.  Then add half a cup of beef broth and cook, uncovered, over low heat for 10 minutes, adding more beef broth as necessary to keep moist
  5. Mash potatoes in bowl with rest of butter, season to taste (you can add sour cream or cheese to the potatoes if you’d like)
  6. Place beef mixture into baking dish. Distribute mashed potatoes on top. Rough up with a fork so that there are peaks that will brown nicely. You can use the fork to make some designs in the potatoes as well.
  7. Cook in 400 degree oven until bubbling and brown (about 30 minutes). Broil for last few minutes if necessary to brown.

Oops also sorry for not taking a pic of my end result!  We ate it right away before I could snap a pic!
