EHS Cookie Sandwiches!

We all went to Ephrata High School.  Yep!  All of us!  Anyway, after lunch almost every day, you could find at least half of the student body in line for cookie sandwiches.  After I spent $4.50 on a cookie sandwich from Mrs. Fields that wasn’t nearly as good (props to the lunch ladies of EHS!), I had to take matters into my own hands.

Everyone thinks my chocolate chip cookies are amazing. I don’t really bake, but I find that when I follow directions and measurements very carefully, things turn out to be great! The funny thing is, everyone probably has this recipe in their pantry right now. These are Nestle’s Toll House Chocolate Chip Cookies.  The recipe is on the back of the bag!

For 5 dozen cookies, or 2 1/2 dozen cookie sandwiches:

Nestle Toll House Chocolate Chip cookies:

2 1/4 Cups all-purpose flour

1 tsp baking soda

1 tsp salt

1 cup (2 sticks butter) softened

3/4 cup granulated sugar

3/4 cup packed brown sugar

1 tsp vanilla extract

2 large eggs

2 cups Nestle Toll House Semi-Sweet Chocolate Morsels

1 cup chopped nuts ( I don’t use these in my cookies)

Preheat oven to 375 degrees.

Combine Flour, baking soda and salt in small bowl.  Beat butter, granulated sugar, brown sugar, and vanilla in large mixer bowl until creamy.  Add eggs, one at a time, beating after each addition.  Gradually beat in flour mixture.  Stir in morsels (and nuts if you’re using them).  Drop by rounded tablespoon onto ungreased baking sheets.   Tip:  I use Air Bake baking sheets, and I love them!  

Bake for 9-11 minutes or until golden brown.  Remove from baking sheets after 5 minutes and put on paper towels or cooling racks.

Cream Filling Recipe:

1 stick of butter softened

8 oz cream cheese

3 cups powdered sugar

8 oz whipped toppingMix and cream butter and cream cheese

  1. Add powdered sugar
  2. fold in cool whip
  3. Add to the center of cookies when cookies are completely cooled.  Keep in the refrigerator for storage.
